 Animal activists in California are gearing up for the biggest fight in recent history. A ballot initiative called the Prevention of Cruelty to Farm Animals Act would require all pork and veal sold in California be produced without crates, and all eggs produced and sold in the state be cage-free. “If you see something that you know is morally wrong and you have a chance to change that, you probably should,” says activist and Farm Sanctuary member Vince Plodzien, who took time out to visit Farm Sanctuary in Acton, CA, where he outlined just how fellow easy it is to get involved in making that change possible. LE KVASS RUSSE, LA RECETTE EN FRANCAIS DANS MES MAILS

ci, j’entends « kvass » comme une méthode facile de lacto-fermentation que vous pouvez tester sur de nombreux légumes (voir étape 1 ci-dessous).

Le kvass présente plein d’avantages :

• Il permet de conserver vos légumes plus longtemps
  
  
• Il rend les légumes crus plus faciles à digérer (les bactéries décomposent les sucres que nous ne digérons pas, comme le raffinose du brocoli)
  
  
• Il fait baisser la pouvoir glycémiant des légumes sucrés comme les betteraves (les bactéries se nourrissent du sucre). Le kvass réduit donc votre risque de diabète de type II.
  
  
• Le kvass n’est pas cuit, donc les légumes conservent tous leurs nutriments… et même plus ! voir avantage n°5.
  
  
• Durant la lacto-fermentation les bactéries commencent la décomposition des légumes, ce qui rend les nutriments (vitamines, minéraux) plus facilement assimilables pour vous.
  
  
• Et bien sûr, le kvass enrichit les légumes en probiotiques – des bonnes bactéries qui vont réensemencer votre flore intestinale.
  
  

Voici la recette du kvass en 4 étapes

Étape 1 : Préparez vos légumes crus. Par exemple :

• Betteraves en dés
  
  
• Concombres en rondelles
  
  
• Gros cornichons entiers
  
  
• Carottes en rondelles
  
  
• Fleurettes de brocoli
  
  
• Fleurettes de chou-fleur
  
  

Étape 2 : Remplissez un bocal avec ces légumes (vous pouvez même les mélanger). Ajoutez de l’ail, du gingembre, et des herbes (par exemple de l’aneth), selon vos goûts.

Étape 3 : Ajoutez de l’eau dans le bocal de façon à couvrir les légumes.

Vous allez ensuite extraire cette eau du bocal, afin de la transformer en saumure. Cette technique vous permettra de préparer la quantité exacte de saumure nécessaire.

Vous allez peser cette quantité d’eau et y ajouter 2% de sel. C’est-à-dire, 2 grammes de sel pour 100 grammes d’eau. Puis vous allez mélanger pour que le sel se dissolve dans l’eau. Vous pourrez faire chauffer l’eau dans une casserole pour faciliter la dissolution du sel. Votre saumure est prête.

Étape 4 : Enfin, ajoutez votre saumure au bocal. Refermez le couvercle et placez le bocal dans un endroit sombre à température ambiante (18-23°C) pendant deux jours.

A présent, votre kvass est prêt. Vous pouvez le manger tel quel, ou en salade. Vous pouvez boire la saumure qui se sera transformée en jus probiotique – excellent pour votre santé. Vous pouvez aussi l’utiliser comme vinaigre pour vos vinaigrettes.

Le kvass se conserve plusieurs mois au frais (3°C).

Vous verrez que faire son kvass est une technique de plus qui va changer votre manière de cuisiner.

The Humane League isn't lovin' McDonald's treatment of chickens.

Citing "outrageous" animal cruelty, the international (with a local Chicago office) nonprofit launched a public campaign this week that targets the fast-food giant in its own backyard.

"Chicago is McDonald's home city, so we want people here to know what they're up to," says David Coman-Hidy, the Humane League's president.

The campaign began Tuesday with the purchase of dozens of colorful anti-McDonald's ads—slogans include "There's nothing happy about McDonald's Happy Meals"—on benches, buildings, and billboards and in newspapers, among them the New York Times and the Reader. Meanwhile, a truck hauling a supersize six-by-12-foot-high Happy Meal with a diseased chicken's legs sticking out of the packaging was spotted driving around the city.

On Wednesday morning, members of the the Humane League—including a man dressed as Ronald McDonald and a person in a disfigured chicken suit—protested outside the McDonald's in the Loop at 23 S. Clark. The group is busy Thursday with a "virtual reality and 3-D tabling event" in Wicker Park, followed by a "community launch party" at Revolution Brewing (3340 N. Kedzie) later tonight..

..............."The most important thing is the the genetics of these birds," says Coman-Hidy. "They've been selectively bred for generations, and they grow unnaturally large at a rapid rate, approximately six times faster than normal chickens. They're killed when they're babies, and they suffer greatly until then. It'd be like a human toddler weighing 660 pounds." In an e-mailed statement, a McDonald's spokesperson said: "We're committed to sourcing our food and packaging sustainably, including the welfare of the animals in our global supply chain. We believe that our outcome-based approach provides the most comprehensive way forward to measurably improve chicken welfare. We recently announced a Global Chicken Sustainability Advisory Council, a multi-stakeholder group including leading academics and animal health and welfare experts, global suppliers, and NGOs. This group will provide deep expertise, diverse perspectives, and provide recommendations for evolving our chicken welfare and sustainability strategy."
